In a large pot, add potatoes and vegetable stock or water. Bring to a boil, then let simmer.
Add remaining ingredients except cilantro and lime. Stir and let summer for 30-45 minutes.
When ready to serve, add some fresh cilantro and a squeeze of lime juice on top of each bowl.
Serve & enjoy!
