1. Cut veggies into large chunks, coat in olive oil and season with salt and pepper.
2. Place veggies on a sheet pan and roast at 425 degrees for 25-30 minutes.
3. Put roasted veggies, broth, and taco seasoning in blender then blend until smooth.
4. Add your toppings: cheese, beans, shredded chicken. corn, avocado, tortilla chips, cilantro.
