Suggest a better descriptionOil frying pan on medium/high heat
Fry pepper, onion, Courgette, aubergine/butternut squash, tomatoes and garlic
Add spinach and herbs
Crack eggs into bowl, add milk, butter and cheese then whisk
Pre-heat oven to 180°
Add egg mixture and briefly stir and spread
Once evenly spread, do not touch until solid (approx 5 - 10 minutes)
Move pan to oven for further 5 - 10 minutes until top is cooked
