Sift the flour and salt into a bowl. Rub the shortening into the flour. Add water to make a soft pliable dough and knead on a floured surface 2-3 minutes, until smooth. Let rest for 15 minutes. Divide the dough into 10 equal pieces; keep the pieces covered with a damp cloth. Roll out each piece to 7-8 inches in diameter. Heat a griddle to smoking hot; do not grease it. Brush excess flour off one tortilla and cook 20-30 seconds on each side. Scrape off the any deposits before cooking the next tortilla.
