Simple, delicious Puerto Rican recipe
Put enough oil in a pan to just cover the bottom.
Once the oil is heated, add the plantain slices on the cut side.
Heat the plantains for 3 1/2 minutes on each side. This will soften them enough to squish them.
Remove the slices from the oil and place on a cutting board.
With a mallet, smash the slices to about 1/4 inch thick.
Return to oil and cook for an additional 1 minute on each side.
Serve hot and salted.
If cutting the slices ahead before cooking them, place them in salted water to prevent them from browning.
