Combine lettuce, strawberries, and brie in a large bowl.
For the almonds: Combine almonds and 1/4 cup sugar in a pan. Cook over medium heat, stirring constantly, until sugar liquefies and browns. Evenly spread on foil or parchment paper to cool. Once cool, breakdown larger pieces and add to salad mixture.
To make the salad dressing: Combine the oil, remaining 1/2 c. sugar and vinegar and mix well. Once the sugar has dissolved, add in the mustard and poppy seeds. Chill until serving time.
Just prior to serving, toss the salad in the dressing, and enjoy!
