2. In processor with blade, process onions and eggs 30 second. In bowl, mix Panko, cornstarch and onion puree. Stir in potatoes. Season with salt and pepper.
3. In skillet over medium-high heat, heat 1/4" oil Working in batches, shape potato mixture into patties (3 Tbs. each). Cook 5 minutes or until golden, turning once. Drain. Serve immediately with applesauce.
