A delicious twist to this breakfast favorite!
In a blender (I use my Vitamix), blend the oats until they are a fine consistency. Add the next 7 ingredients to the blender and blend until smooth.
Pour the mixture into a glass 8x8 baking dish.
Cut the cuban bread into 1/2 inch slices and soak in the mixture.
Heat a non-stick frying pan to med-high heat.
Place the soaked bread into the pan and cook 2 minutes on each side.
(Stir the mixture between batches.)
