This is definitely not your mother’s tuna noodle casserole. Filled with the tasty combo of chopped dill, basil pesto and tomatoes, it has fresh end-of-summer flavor not found in the original. And although it’s still finished with the classic topping of crushed potato chips, this version uses a salt and vinegar kettle variety for a contemporary spin.
1. Heat oven to 400°F. Spray 11x7-inch glass or ceramic baking dish with cooking spray. Cook egg noodles according to package directions; drain. Rinse under cold water to cool; drain.
2. Heat oil in large saucepan over medium-high heat until hot. Cook onion 3 to 4 minutes or until starting to soften, stirring occasionally. Add garlic; cook and stir 30 seconds or until fragrant. Stir in flour; cook 1 minute, stirring constantly. Whisk in milk; bring to a boil. Simmer 3 minutes or until slightly thickened, whisking frequently.
3. Stir in pesto, lemon juice, dill, salt and pepper. Gently stir in noodles, tuna, spinach, beans* and tomatoes. Spoon into baking dish; top with chips.
*Cannelini beans may be substituted with Great Northern or white (navy) beans
4. Bake 20 to 25 minutes or until hot and bubbly on edges.
