This delicious simple recipe has only four main ingredients and takes hardly anytime at all to throw together. Just 10 minutes to put it together and cook. Your family's mouths will water as the smells drift to their noses and you will have time while it cooks to sit and relax. Everyone wins!
Pre-heat oven to 375 degrees. Grease 3-quart casserole with olive oil spray. Measure four cups of Instant rice into the dish. Add seasonings to rice and then stir. Open and drain tuna then add to the rice and seasonings, Add water, eggs and 1 1/2 c. cheddar cheese to rice mixture in that order. Mix well and cover dish. Place in pre-heated oven at 375 degrees for 40 minutes. Sprinkle 1/2 c. of cheddar cheese over the top when cooking is completed. Allow to cool for 15 minutes. This tastes great with equal parts (or your preference) lemon-juice and butter melted together and poured over it.
Note: I prefer to use the water off the tuna so I do not usually drain the tuna, but I subtract that amount of tuna water from the total water needed.
Start checking the casserole at 30 minutes as ovens can vary in cooking times. Pull it out when the cheese is melted and the top is slightly browned.
