Refreshing and light, these lettuce wraps are perfect for lunch or a light dinner.
Wash and crisp lettuce. Place tuna, carrots, Miracle Whip, onions, mustard and half and half in a bowl. Stir to mix ingredients. Refrigerate until cool. (at least a couple of hours) To serve, measure 1/2 cup of mixture for each serving into a separate bowl, (Do not mix more than you are going to use.) Mix in potato sticks using a 1 to 1 ratio. (For each cup of tuna mixture, add 1 cup of shoestring potatoes.) Wrap the mixture in crisped lettuce leaves, or make romaine 'boats' and serve. Delicious! Approximate serving: 3 lettuce wraps.
