Delicious stuffed shells with spinach and turkey covered in sauce made from fire roasted tomatoes. Putting this together is a lot easier than it may look.
Preheat oven to 350 deg. Spray a 13x9-inch baking dish with nonstick cooking spray.
In a large skillet, heat olive oil over medium-high heat. Add onion and garlic; cook for 3 minutes. Add turkey, and cook for 5 to 6 minutes, or until browned and crumbly. Remove from heat, and stir in spinach, cream cheese, mozzarella cheese, 1 1/2 cups Parmesan cheese, red bell pepper, salt, and pepper; spoon mixture into cooked pasta shells.
Spoon half of Fire Roasted Tomato Sauce into prepared baking dish. Place stuffed shells in an even layer over sauce. Spoon remaining sauce over shells. Bake for 45 minutes. Sprinkle with remaining 1/2 cup Parmesan cheese. Bake for 15 minutes, or until cheese is melted.
Note: This recipe can be made 1 day ahead and refrigerated or frozen for up to 1 month. If frozen, thaw completely in refrigerator before baking. Add remaining 1/2 cup Parmesan cheese after 45 minutes of baking as in recipe. Bake for 15 minutes longer, or until cheese is melted.
Fire Roasted Tomato Sauce
(Makes 4 cups)
In a large nonreactive bowl, combine tomatoes, Italian seasoning, salt, pepper, and sugar. Cover, and chill for up to 3 days.
