Completely non-traditional, and very nutritional. About 350 calories (9 WW points) for a HUGE serving
Put chopped Turkey, mushrooms, baby corn, and water chestnuts in a bowl, add the Spicy Peanut and Hoisin sauces, toss thoroughly to coat
Add Sesame oil to a skillet or wok at 275 degrees
Add Asparagus and Celery, and stir-fry for 5 minutes
Meanwhile prepare the noodles in a pot with 3-4 quarts of water, boil 7 minutes
Add the Turkey/veggie mix to the skillet/wok and turn the temperature down to 240 degrees
Saute the mix, stirring frequently, for about 10 minutes
Drain the noodles, stir in 1 tsp Sesame oil and serve on two plates
Spoon the mix on top of the noodles
Top with Soy Sauce to taste, and enjoy!
