Preheat over to 375 degrees. Unroll crescent dough separate into 16 triangles. With wide ends of triangles toward the centre, arrange 8 triangles in a circle on a pizza stone. Corners of wide ends will touch and points will extend 1 inch bend edge of baking stone. Arrange remaining 8 triangles in centre, matching ends. Seal seams using pizza roller (do not seal points overlapping in the centre).
Measure mayonnaise, mustard and black pepper in a large bowl. Combine turkey, celery, parsley, cranberries and swiss cheese. Scoop filling over seams of dough forming a circle.
Coarsely chop walnuts and sprinkle over filling. Beginning in centre, lift one dough triangle across mixture. Continue alternating with outer triangles, slightly overlapping for form wreath. Tuck last end under first.
Separate egg and beat egg whie lightly brush over dough and bake 25-30 minutes until golden brown.
