1. Add butter and olive oil to frypan on medium-high heat
2. Add turkey legs and brown outside
3. Add onion, celery, garlic and carrots
4. Cook till soft (5 minutes)
5. Add wine and bring to boil
6. Reduce by 1/3 2-3 minutes
7. Add herbs, and simmer on low for 2-3 hours
Alternatively skip all the steps above and throw all ingredients including half a glass of water into a slow cooker and cook on high for 4ish hours until turkey is tender
Serve with mash and cranberry sauce
