Wash the greens, let them drain, sponge off the excess water and refrigerate.
Stir together the yogurt and ginger in a medium bowl. In a large bowl, combine the turkey, celery, orange segments, water chestnuts and grapes. Pour in the yogurt mixture and stir well to coat.
Cover and refrigerate at least 2 hours.
Put the greens on plates. Top with the turkey and fruit mixture.
You can swap out orange or lemon yogurt for the peach yogurt.
