Cook ground turkey and spices until turkey so no longer pink. In medium bowl combine ricotta, spinach, and 1 1/2 cups of mozzarella.
Spread some pasta sauce in bottom of crock pot, then layer 4 noodles, 1/3 of turkey, 1/3 of cheese mixture, and more sauce. Repeat noodles, turkey, cheese, sauce two more times. Finish with last 4 noodles and the rest of the sauce.
Cover and cook on low for 3 1/2 hours. Turn off crock pot, sprinkle with remaining cheese, and let stand for 10 minutes.
