In a large skillet over medium heat, heat sesame oil and garlic for 2 minutes.
Add ground turkey and good until done. Drain.
Stir in green onions, carrots, mushrooms, celery, ginger and red pepper. Cook for 5 minutes.
Add cilantro leaves and cook for a few more minutes.
Season with salt and pepper.
Add honey and cook for 2 minutes.
Spoon into lettuce cups.
