Prepare meatballs according to directions. While they are baking, in large soup pot, over medium heat, saute celery, carrots and onion in olive oil for 10 minutes or until desired softness. Sprinkle with a pinch of sea salt.
Add stock/broth and extra cups of water if using. Add chopped cauliflower to pot. Stir in frozen chopped spinach and turkey meatballs. Simmer for 30 minutes. Season to taste.
I made the turkey meatballs using a previous recipe, I made them small and didn't cover them to bake and they were done in 18 minutes.
I think I'll be checking back where I found this recipe, it was a cute site.
