minestrone soup with turkey
Cook turkey. In another pan, cook garlic,onion and carrots in olive oil. Drain turkey. Stir in onion,carrots,,celery, oregano and basil, cook 5 min.
Add tomatoes, broth, beans and pasta; cook until pasta is tender. Stir in spinach, salt and pepper. Serve with parmesan if desired
NOTE: Sometimes put everything together except pasta and last step until the end.
Also used more carrots, onion, and celery and less black pepper.
