Preheat the grill.
Combine the egg substitute and parsley then add salt and pepper
Place a medium-sized non-stick frying pan on medium-high heat and add the olive oil
Saute the peppers for 5minutes then add the egg mixture and turkey and allow to set for 2minutes
Then place under the grill for 3mins.
Remove from the grill, cut in half and serve hot
