Cook the ground turkey in a large, oven-safe, open-saute pan (this will allow for one-skillet cooking). Add the chopped garlic, cook on medium for about a minute.
Stir in the tomato sauce. Drain the diced tomatoes and add to the mixture. Cook for another minute.
Reduce heat and top with mozzarella cheese, tomato slices, spinach, and parmesan cheese. Add other spices to taste.
Cook in oven safe skillet for 15-20 minutes at 400 degrees or until cheese begins to brown.
Serve with a salad.
