Nice large turkey burger which is lovely with a simple salad. No need for a bun!
Grill the bacon (make sure it doesn't get too crispy). Leave to cool and then chop into small pieces.
Then, in a large bowl, combine bacon with turkey, grated sweet potato, onion, egg, salt, and pepper. Form into 8 burgers. I use a quarter pounder burger press as it keeps a nice shape.
Cook the burgers in batches (depending on how large your frying pan is) in bacon fat or coconut oil for 7 minutes per side; or until cooked through.
Serve with a fresh salad.
