Yummy way to use up leftover turkey. You can also used cooked chicken or pork for variety.
Separate eggs and beat whites until stiff. Set aside
In sauce pan over med heat make sauce of first 6 ingredients. Cook for 2 minutes.
Remove from heat and add turkey, egg yolks, and parsley.
Fold in whites.
Pour into a buttered 2 quart casserole and bake 35 minutes at 350F.
Serve with sauce of 1 can mushroom soup and 3/4 cup water.
