This dish is really healthy and easy to make, otherwise I would not make it. :-)
Tools:
Large skillet, preferably with a lid
Two mixing bowls
A sharp, big ol' honkin' knife
Prep Notes: For the oregano, black pepper, and turmeric, just sprinkle it around, so season to taste. They're all really good for you. The black pepper greatly amplifies absorption of turmeric. For the garlic, if using fresh or from a jar, go easy and adjust each time you make it. You want as much as you can handle. Garlic power isn't as strong, so you can sprinkle it around a bit. Garlic is a great cancer fighter, even if you don't have cancer. :-)
Instructions:
Chop asparagus stalks into 1/2 to 1 inch lengths.
Wash and peel sweet potatoes, slicing one edge so it lays flat and does not roll around. Place into its own bowl.
With the big ol' honkin' knife, slice sweet potato into 1/2 inch width and then slice across to make small cubes. Place into its own bowl.
Add olive oil to skillet
Cook turkey in skillet. No need to drain anything if you use 99% lean.
Add oregano, garlic, black pepper, and turmeric
Add cashews and cook for a few minutes, stirring occasionally.
Drizzle in a little more olive oil. You don't want the mixture to dry out.
Add asparagus and cook for a few minutes (with lid on).
Drizzle in a little more olive oil. You don't want the mixture to dry out.
Add sweet potatoes and cook (with lid on) until they are a the degree of softness you prefer.
Serve it up into bowls and chow down!
