Sautée pepper and onion in olive oil until golden and set aside.
Brown turkey in same skillet as the vegetables. Once thoroughly cooked, add taco seasoning and water and cook until evaporated.
While the turkey is cooking, separate lettuce and vegetables in large salad bowls. Top with sautéed veggies and turkey.
Serve with salsa and balsamic vinegar if desired.
