Delicious low-fat way to use up thanksgiving turkey!
On medium heat in a 5 quart pan, saute onion in oil until translucent. Stir in chilies and taco seasoning, mix, cook 1 minute. Add tomatoes, break up with spoon. Stir in broth, bring to a boil. Add corn & turkey, cook/simmer 5 minutes on low/medium heat. Add cilantro. Serve with tortilla pieces & cheese on top.
