To make the pitta crips, heat the oven to 200C. Cut the pittas into large triangles and pull apart. Place on baking tray and spray with olive oil.
Season and sprinkle with sumac or chilli powder. Bake for 8-10 minutes until golden. Remove and cool.
For the salsa, mix all the ingredients and season. Serve with the pitta crisps.
