A salad with arugula, avocado, turnips, pine nuts and truffle oil
****** SALAD OF AWESOMENESS ***** (do that in deep powerful voice with echo effect)
+ SALAD BASICS
1 bunch of Baby Arugula
1 Avocado
handful of Roasted Pine nuts (I put these in everything)
5 drops of Truffle Oil
+ NOW FOR THE TURNIPS
+ Boil 4 turnips for about 15 minutes on high heat until soft.
+ take out of pot, and cut into cubes (feel free to peel skin if you like)
+ put in frypan along with 1 tbspn of unsalted butter
+ mix in fresh cut parsley
+ mix in lemon zest (although I used lime last night which was just as nice)
+ mix in breadcrumbs
+ mix in salt and pepper
Cook until brown, just like potatoes.
Once cooled slightly, toss in salad and Voila! Salad of AWESOMENESS.
