Turtle Soup
Bring 5 quarts of water to a boil with bay leaves skim white off of top and throw away - add turtle meat boil for 5 minutes then and additional 30 minutes on medium heat.
Remove from water set on aside - once cooled trim and chop finely in food processor set aside
Brown 2 cups of flour - start in microwave then move to a pot - brown as you would make a dark roux add two sticks of unsalted butter once dark add all veggies and garlic cook until onions turn clear
Take the turtle water and strain once strained add veggies and cook for 15 minutes
Add everything but the eggs and green onions - slow boil for an hour add - grated boiled eggs and green onions cook as needed
