Clean chicken thighs removing excess fat/skin. Cut into bit sized chunks, about half inch by 1 inch. Place in large bowl and add half the lemon juice, olive oil and Tuscan seasoning (e.g. Victoria Taylor's or Kirkland). Cover with plastic wrap and shake to coat all chicken pieces with marinade. Let sit for half hour (while continuing other prep)...
Peel garlic and mince with garlic press, place on small plate or dish and drizzle with a few drops of EVOO.
Prep vegetables and place into separate prep bowls.
Heat up large, lidded casserole pan (at least 4.4 quart). When hot, add chicken and onion. Saute until chicken lightly browned. Add pepper strips. Continue sauteing, stirring often scraping down sides. Add spinach and fold into chicken vegetable mixture until wilted. Add tomatoes (with juice) and fold in. Add drained beans.
When all ingredients incorporated, add chicken broth and bring to a boil. Reduce heat and simmer for 45 minutes with lid partially cocked to the side to allow some venting.
After simmering 45 minutes, add dry orzo and stir it in. Return to a boil momentarily then reduce heat back to medium low for 10 minutes (uncovered).
Remove from heat and finish with remaining lemon juice, parsley and Parmesan cheese, stirring in to incorporate. Rest uncovered for 5 minutes and serve in dinner bowls passing additional Parmesan and parsley as garnish. Ground black pepper to taste.
