Baked potatoes
Bake potatoes at 400 until done, approximately 1 hour. Carefully remove potatoes from oven with mitt. Cut potatoes in half lengthwise and carefully scoop out potato from skin, leaving enough skin in tact to replace the potato when mixed. Place the scooped out potato in a mixing bowl and add the butter. Mix with a mixer until smooth. Add the sour cream, salt and pepper and continue to mix until very smooth. Spoon mixture back into the potato skins and top with cheese. Bake at 400 for 10-15 minutes until potatoes are hot and cheese is melted.
