A perpetual favorite!
Preheat oven to 400 degrees Fahrenheit. Wash and gently scrub potatoes with clean brush. Bake 45 -60 minutes, or until tender. Cut off top third of each potato, scoop out insides and mash. Add butter,salt, and pepper to taste, and milk. Beat until fluffy. Fill shells with mashed potatoes and top with cheese and parsley. Reduce oven to 375 degrees Fahrenheit and bake 12-15 minutes. Serve
