Cut potatoes in half lengthwise and scoop insides into a mixing bowl.
Add remaining ingredients to the bowl except parsley or paprika. Beat with wire whisk or electric mixer until smooth and fluffy.
Arrange skins on ungreased baking sheet. Spoon potato mixture into skins. Sprinkle with parsley or paprika.
Bake at 375 for 10 minutes.
