I have known anyone who doesn't love this. Despite the fact it has a long cooking time it's an absolute breeze to make
Put rice wine, star anise, ginger, garlic, spring onions and soy sauce in a large pan.
Add pork belly and enough water to cover meat.. Bring to the boil and simmer for 1 1/2 - 2 hrs until very tender. Turn occasionally.
Remove from pan when cool enough to handle and remove skin.
Heat oven to 200 Celsius, or 390 Fahrenheit
Line a roasting tray with foil and place the pork on it. Mix honey and soy and drizzle over the pork.
Roast for 30 mins turning and basting frequently
Garnish with chile and spring onions
Don't skimp on the turning and basting
