This is a delicious key lime pie with the best of both worlds: a key lime curd bottom layer and a key lime cheesecake top layer. The crust is a combination of Grape Nuts cereal and graham cracker crumbs. Top it all off with lightly sweetened, softly beaten whipped cream, and you will receive raves. Be prepared to make this for every party for the rest of your life!
Preheat oven to 350 degrees.
Using on/off turns, blend Grape Nuts cereal in a food processor until coarsely ground. Transfer cereal into a mixing bowl. Add cracker crumbs, melted butter, and 3 tablespoons of sugar. Press the mixture into a 9-inch diameter deep dish glass pie plate. Bake for 8 minutes, or until crust is golden brown. Remove from oven and let cool completely.
Turn the oven down to 300.
Meanwhile, whisk the whole can of condensed milk, 1/2 cup of lime juice and egg yolks in a bowl to blend. Pour into the pie crust. Bake about 25 minutes, or until the mixture is set. Cool to room temperature.
With an electric mixer, beat cream cheese, 1/2 cup of condensed milk, 1/4 cup of lime juice, 2 tablespoons of sugar and vanilla in a large mixing bowl. Pour over the cooled baked layer. Spread evenly and smooth out the top. Cover and refrigerate until firm, at least 4 hours.
Pour cold cream into a cold bowl. Add sugar to taste and mix with a whisk or electric mixer until soft peaks form. Spread on top of pie before slicing, or serve separately.
