-Put the kidney beans and black beans in two different sauce pans. Soak in water overnight. (If you don't have time to soak the beans, you can substitute by using 1 can of black beans and 1 can of kidney beans)
**next morning**
-Cook beef and sausage in two different skillets on medium/high heat. Drain. Set aside.
-In one of the pans, drizzle olive oil and sauté onion, serrano peppers and garlic until onions are almost clear.
-Mix meat and onion mixture together. Add the Mexican oregano and stir up.
-Transfer everything to crockpot.
-Add diced tomatoes(including liquid), tomato sauce, tomato paste, red bell pepper, green chiles. Stir.
-Add the kidney beans and black beans.
-Pour the chili beans into the crockpot with the other ingredients. The liquid of the chili beans are okay to add in the chili.
-Add seasonings (ground cumin, coriander, chili powder and ground cayenne pepper)
-Slow cook for 8 hours and serve in bowls.
-This chili goes great with sourdough toast or even in a bread bowl. Candied bacon or cheese on top if you're feeling shnazzy. :)
-Add cracked pepper and salt to taste.
