Suggest a better descriptionCook cauliflower uncovered in boiling salted water for 8 mins. until barely tender. Drain then place in a large bowl. Add ham then mix & set aside.
Cream Sauce:
Make a roux by melting butter & flour then cooking for 2 mins. while stirring constantly. Add cold stock then cold Half-&-Half. Use a wire whisk to stir constantly until sauce boils. Cook over low 5 mins. then season with salt & pepper. Mix 1/2 cup cheese into hot cream sauce.
Pre-heat oven to 350 deg-F. Butter a medium shallow casserole or gratin pan. Mix cheese sauce with cooked cauliflower and bacon or ham. Transfer to prepared baking pan. Mix bread crumbs or nuts with melted butter plus 2 tb cheese. Sprinkle over cauliflower. Set casserole dish on a baking sheet to catch any drips. Bake about 20 mins. until golden & cauliflower is cooked.
