A great tasting Peanut Brittle you can make in the microwave
I'm using a 1,100 watt microwave that I suspect is overpowered. All microwave cooking times are done at 80% power. Adjust cooking times/powers accordingly. (IE: Guess. It took me a few times to get it right.) You'll probably spend about 15 minutes making it, and an additional hour for it to completely cool and be ready to eat. (But you could get away with less if you're impatient.) Be warned, if the microwaved mix gets on your hands – you will be burned. Do not use a plastic container instead of a Pyrex bowl, it will melt.
Preparation:
Spray a rimmed cooking sheet with the olive-oil spray.
Combine sugar, corn syrup, peanuts, and salt to the Pyrex bowl. Mix well.
Microwave for 4 minutes, and stir. (Remove bubbles in the mix and then make certain all ingredients are combined completely.)
While microwaving, cut the butter into small pieces, so it will melt more rapidly.
Microwave for 3 minutes, and stir. (Ditto.)
Microwave for 2 minute and stir. (Stir to remove all bubbles, then stop.)
Add Margarine and Vanilla and stir. (Make certain all ingredients are fully mixed.)
Microwave for 1 minute and stir. (Ditto.)
Add baking soda and stir. The mixture will slightly foam up. Stop stirring when the mixture is fully mixed AND the mix has stopped foaming.
Immediately pour onto the baking sheet. It's easiest to lay the pan on the side of the baking sheet and scoop the mix onto the baking pan. It'll probably be a bit thick at this point, so using the spoon, press down on the mixture until relatively thin. If you end up with a gap from pressing too much, just use the spoon to move the mixture back together. Don't worry if it looks a little odd – gravity will smooth out the top of the mix before it cools.
Let the mixture cool completely.
Break the peanut brittle into smaller pieces and then store in an airtight container.
Easiest way to clean the Pyrex bowl and spoon is to soak them in a larger bowl. The peanut brittle mixture will simply dissolve, leaving just the peanuts.
