Just a humble chili recipe.
Begin by placing 8-10 quart stock pot on stove over medium high heat until pot is hot. Add a few tablespoons of preferred cooking oil and toss in onions and peppers. Sauté 5-10 minutes or until fragrant, have some color and slightly soft. Add garlic and all spices, stir to combine. Add some beef stock and stir to deglaze, add remaining beef stock. After stock begins to boil, lower heat to medium and cover. When adding the remining ingredients, stir to combine and recover. Then wait a few minutes between each ingredient to maintain a consistent temperature in the pot. The goal is to keep it boiling or close to boiling. Add tomato puree. Add diced tomatoes. Add kidney beans. Add baked beans. Place sausage or hot links in food processor and pulse until minced, add to chili. Move stock pot to smaller burner over low heat and let simmer. Place large fry pan on main burner over medium high heat. Cook ground beef and strain fat. Add to chili. THIS IS THE MOST IMPORTANT PART OF THIS RECIPE! DO NOT SKIP THIS STEP! Relax and have some brews. Let chili simmer covered for 2 hours stirring occasionally, remove lid and continue to heat for 1 hour to thicken a little. Ready to eat at this point and can serve as desired. Tastes even better the next day after flavors have fully incorporated.
Use pre cut frozen veggies when possible to save time. Recommend serving with shredded cheddar and sour cream on top.
