place a vanilla wafer into the bottom (flat side down) into a paper lined muffin tin.
mix softened cream cheese with eggs and sugar - cream thoroughly on low speed
add balance of ingredients mix thoroughly
fill cups 2/3 full and bake 12-15 minutes or until shine goes off the tops and they have risen slightly
cool before removing from tins
top with fresh fruit or cherry pie filling
do not over mix or over cook
