Uncle John Shannon's Irish Soda Bread
Preheat oven to 350 degrees. Spray a round glass Pyrex bowl with PAM and set aside. Place buttermilk, butter, beaten egg and raisins in a medium bowl. Combine dry ingredients in a large bowl and toss with 2 forks or wire whisk for about 2 minutes. Add buttermilk mixture an mix until combined. Spoon into prepared dish. Bake for 50-55 minutes (it should sound hollow when rapped). Leave in the pan for a couple of minutes. Cool completely on a wire rack.
You can substitute 3/4 cup raisins and 1/2 cup of chopped nuts if you prefer for the 1 1/2 cups of raisins.
