Easy family favorite - this "fried" chicken is actually baked.
Preheat oven to 400F. Prepare a baking pan with a wire rack to permit heating the chicken from all sides.
For breading, combine panko, rosemary, and ground nuts. Heat in a pan over medium heat until fragrant and the panko browns slightly.
Mix buttermilk and Dijon mustard in a bowl.
Coat each chicken breast in the buttermilk/mustard mixture, then coat in the panko/rosemary/nut mixture.
Bake 30 minutes at 400F.
