1. In a pot on the stove, combine and heat all ingredients to boiling except the cilantro. Stir well to distribute the spices.
2. Continue to simmer for an hour or until vegetables are soft.
3. Or, combine ingredients in a slow cooker and cook on LOW for 4 hours, stirring once or twice.
4. Add the cilantro just before you're ready to serve with rice or naan bread.
