A different take on this classic recipe. The addition of bisquick makes this a hearty meal. We often use this to clean the leftovers from the fridge, using leftover mashed potatoes, or meatloaf, steak or roast beef instead of the ground beef or leftover vegetables. Use your imagination.
Preheat your overn to 350.
Brown ground beef with the minced garlic. Once the meat is cooked through, add the onions and saute until semi-soft. In the same pan, pour the mushroom gravy mix and water; simmer until the liquid begins to set up into gravy. I use pepper in the beef, but avoid salt since the gravy mix will add that.
Using the butter or margarine, coat the bottom of a deep rectangular cassarole dish. Mix the prepared mashed potatoes (cooled) with the raw egg. This will help bind the potatoes together when baking and is an optional addition. Spread the mashed potatoes in an even layer into the butter lined baking dish.
On top of the potatoes, pour on the hot ground beef/gravy mixture. Then, take your vegetables (I use peas corn and carrots, but you can use anything really) and layer evenly over the beef and gravy layer.
Mix the baking mix with cold water in a separate bowl until it's a thick but pourable batter and using a knife or spatula, spread it evenly over the ntire cassarole. Sometimes I will add garlic, thyme or other seasonings to the baking mix for added flavor or put pats of butter on top before baking.
Put in your 350 degree oven for approx 30 minutes or until the baking mix is cooked through and golden brown. Once done, let it rest 10 minutes before cutting or scooping.
Serve as is or with additional gravy on the side for topping.
Mix it up! Use taco meat or leftover chili instead of beef, refried beans instead of mashed potatoes and corn and salsa instead of veggies, then top with cornbread instead of baking mix...the combination and flavor possibilities are endless!
