Tandoori chicken recipe from Usha Sellers
1. Make 2-3 slits in the chicken legs and rub in the lemon juice and salt on each leg. Set aside for 15-20 minutes.
2. Prepare the Marinade:
Puree the ginger and the garlic.
Add all of the dried spices to the puree.
Add all of the liquid ingredients and mix thoroughly.
3. Place the chicken and the marinade together in a deep dish or ziplock bag. Marinade for 8 to 24 hours.
4. Place chicken in a baking pan. Cover with foil and bake at 400 degrees F for 20 minutes.
(alternative: grill the chicken over indirect heat, basting with extra marinade. Finish with searing/charring over direct heat)
5. Remove the foil and broil on both sides basting with oil. (optional: try grilling at this point).
6. Sprinkle with Garam Masala and then broil one more time.
7. Serve with a slice of lemon.
Can also serve on a bed of salad made from sliced onions marinated in lemon juice, thinly sliced cucumbers, sliced tomatoes, green chillies and fresh parsley (optional - juliienned radishes).
First time I made it, baked at 400 degrees F for 20 minutes then grilled on direct heat. Next time will increase baking time to 25 minutes. I used both legs and thighs, but thighs were the best.
