- Scrape seeds from vanilla bean; add seeds and pod to pan
- Whisk in milk, cook over medium heat, stirring, until just steaming
- In a bowl, whisk eggs and whisk in half of the hot mixture
- Gradually whisk back into pan
- Cook over medium heat, whisking constantly, until bubbly and thickened (5-8 minutes)
- Whisk in butter, vanilla and salt
- Strain through fine sieve into clean bowl and place plastic wrap directly on surface
- Refrigerate until chilled (approx. 4 hours)
