A nice, easy recipe for those of us who are still beginners at dessert making! This recipe was discovered by my 10 year old son.
Preheat the oven to 350 degrees F.
Combine the cream cheese, egg yolks, 3/4 cup of the sugar, and the vanilla in a bowl and mix with an electronic mixer on medium speed until smooth. In a separate bowl, using clean beaters, beat the egg whites until stiff. Fold the egg whites into the cream cheese mixture. Pour into the crust/pan and smooth the top.
Bake for 45 minutes, or until the sides have risen and are beginning to brown. Transfer to a wire rack and let cool for 10 minutes.
Meanwhile, increase the oven temperature to 400 degrees F. Whisk the sour cream and remaining 1/4 cup sugar in a bowl. Pour over the cheesecake and smooth the top. Return the cheese cake to the oven and bake for 10 minutes more, until the topping looks set around the edges. Cool completely on a wire rack. Cover and refrigerate for at least 6 hours. Garnish with the kiwi fruit (or other fruit) with a little confectioner's sugar.
