Put cream, milk, salt, 1 cup of sugar and the whole split vanilla bean in a saucepan over medium heat and simmer until 175 (~15 minutes)
Remove the bean husk.
Add yolks and 1/2 cup of sugar to a bowl and whisk. The yolks will lighten to a bright yellow.
Temper yolks then add back to saucepan and cook over medium-low heat for 10-12 minutes. Do NOT boil.
The mixture will coat the back of a spoon. Remove from heat and then refrigerate covered until the mixture reaches 40 degrees.
Then add to an Ice Cream churn and enjoy...
You can add your extras at different times....
Peaches can be added post cooking and while the mix is cooling....
Chocolate pieces should be added just prior to the churning process...
