Suggest a better descriptionUsing a sharp knife, cut your vanilla pod lengthwise. And, using the knife, scrape out the seeds. Cut the pod into 1-inch pieces
Pour coconut milk into a saucepan and add in vanilla seeds and pod. Simmer for 15-20 minutes to infuse. Allow to cool completely. If you aren't using a vanilla pod, simply heat up the coconut milk until incorporated and no longer lumpy. Do not attempt to blend coconut milk, as you'll end up separating the solids and making it curd.
Mix together thoroughly the cooled vanilla-infused coconut milk, yogurt, vanilla extract, vodka and sweeten to taste. Remember that things taste less sweet when frozen, so you'll want to turn it up a notch.
If no ice cream maker is at hand, place ice cream in a ziplock bag and place in the freezer for an hour. Take it out and squeeze the bag to break up the ice crystals. Repeat every 40 minutes or so until desired consistency is reached (about 5 to 6 hours).
Or churn in an ice cream maker following manufacture's instructions (about 15 minutes). If you like your ice cream firmer, freeze in the covered container for one to two hours.
RECIPE NOTES
*You absolutely NEED to use full fat coconut milk here! As lighter versions are simply diluted in water, and they'll make your ice cream more icy.
**UPDATE: we recently whipped up a batch with xylitol, and it turns out that it's THE BEST sweetener for ice cream as it helps to retain the creamy texture (i.e. just like the alcohol, it prevents it from freezing rock solid). You can also use Swerve or Pyure (at half the amount), but the results really are outstanding with xylitol.
Though if using xylitol, make sure to be careful if you have a pup around the house, as it’s highly toxic to the little guys! ??
